Christmas bar with clementines and dark chocolate

Christmas is time for your family and loved ones! If you love surprising them with new healthy and super tasty recipes just like us, why not try our Christmas inspired recipe for а raw bar.


(4-6 bars) 
base layer: 
120g Medjool dates, pitted 
30g almond butter 
15g walnuts, or other nuts 
1 Tbsp coconut butter, melted 
1 Tbsp cacao powder, raw 
Freshly grated peels from one clementine 
cashew cream layer: 
60g cashew butter 
1 Tbsp Maple syrup 
1 Tbsp Coconut oil 
a pinch of Bourbon vanilla 
for decoration: 
30g raw vegan chocolate 
more clementine peels, optional

  • Mix all ingredients for the base layer in a food processor/ blender. 
  • Spread the mixture on a non-sticking surface. Form a square and flatten well. 
  • Mix or stir by hand the ingredients for cashew cream layer -  until it becomes creamy. 
  • Cover the base with the cashew cream. 
  • Melt gently the chocolate in a water bath and pour over the dessert. 
  • Sprinkle with more clementine peels. 
  • Cut into bars/ squares and serve, but first cool.
