Mint bars

Our friend the mint is always fighting culinary stereotypes. But what happens when its freshness joins forces with the rich chocolate? The sweetest fresh beginning of 2017. 


(15 mini bars)

200g Medjool dates, pitted
100g oatmeal (oat flakes)
30g almonds, ground
50ml Coconut syrup
2 Tbsp cacao powder, raw
1 Tbsp coconut butter, melted
1 drop of mint oil


for decoration:
50g vegan raw chocolate
fresh mint leaves

Mint bars


  • Grind the oatmeal into fine flour.
  • Mix the mint oil into the coconut blossom syrup.
  • Mix all ingredients to obtain a sticky mixture.
  • Transfer the mixture to the not-sticky surface and press down to form an even layer around 1cm thick.
  • Allow to cool, for easier cutting.
  • Decorate with melted vegan chocolate.
