Berry Chia pudding

Raw Desserts

Light chia seed pudding with berries as a tasty low-carb breakfast recipe, or as a sweet snack. The chia seeds are a good vegetarian source of omega-3 fatty acid.


(for 2 portions)


100g raw cashew

1-2 Tbsp sweetener (coconut blossom syrup, agave or 1-2 dates)

1 Tbsp chia seeds

1 Tbsp freshly squeezed lemon juice

50g berries of your choice (strawberries, raspberries or blueberries)

Berry Chia pudding


  1. Soak cashew in water for a few hours.
  2. Drain cashews and rinse them with cold water.
  3. Аdd to a blender and blend until completely smooth and creamy, together with the sweetener, fresh lemon juice and preferred berries.
  4. Mix in the chia seed with a spoon (do not blend!).
  5. Pour into cups and let the ready pudding rest in the fridge overnight or at least 3-5 hours.
  6. Decorate with coconut flakes and goji berries.
  7. Enjoy!
